ALLEY 6 RYE WHISKEY

86 PROOF (43% ABV)

Our Rye Whiskey is a true small-batch whiskey twice distilled in direct-fire, traditional copper alembic pot stills from a rye malt mash composed of 78% rye and 22% aromatic malted barley from Heidelberg Germany. Each batch is aged for a minimum of nine months in small, heavy charred, new American White Oak barrels.

This young, energetic spirit has a complex flavor paired with remarkable smoothness and character. It boasts flavors of honey and oak and imparts hints of vanilla, spice of rye, and a nice subtle caramel note on the palate.

Common way to enjoy is neat or with a drop of water, also makes for a killer Old Fashioned or Manhattan.

ALLEY 6 SNOCKERED NOG  

• Follow Alton Brown's eggnog recipe 
• Add 3 droppers of Alley 6 86'd Candy Cap Bitters
• Add 4oz (+) Alley 6 Rye Whiskey
• Top with cinnamon, vanilla and fresh whipped cream infused with Alley 6 86'd Candy Cap Bitters

ALLEY 6 IRISH COFFEE

• French Roast coffee
• Add 1.5oz (+) Alley 6 Rye Whiskey
• Top with fresh whipped cream infused with Alley 6 86'd Candy Cap Bitters

THE FUN GUY

In a cocktail glass, place... 
1½ oz   Alley 6 Rye Whiskey
½ oz     Nocino Walnut Liqueur  
½ oz     Bauchant Orange Liqueur
A few dashes of Alley 6 Candy Cap Bitters
Stir ingredients together with ice and add  a garnish of burnt orange peel

ALLEY 6 OLD FASHIONED

Muddle together the following in the base of a lowball glass:
Zest of lemon
1 tsp sugar in the raw
3-5 drops of Alley 6 Candy Cap Bitters
Then add 2 oz (+) Alley 6 Rye Whiskey
Stir all ingredients with ice
Finish with a burnt orange zest and Luxardo Cherry

“The “spice” characteristic of rye is expressed with a smoky quality here, while the wee hint of plaster may be familiar to Scotch whisky fans. Apple-pie spice and orange peel add charm on the nose, and the winning finish balances malty sweetness with ashy dryness. No doubt, 22 percent malted aromatic barley in the list of ingredients contributes to this appealing whiskey, which is aged only one year in the standard regimen of charred oak barrels, but surely there’s something of that unquantifiable distillery magic at play here.”

“Nose: So interesting! Ryes often have a spicy, peppery nose to me, and this doesn’t. It’s more like a visit to a tropical island: Hints of sugar, vanilla, roasted fruit, almost chewy. Like pineapple upside down cake.

Palate: Ah, here is where that rye spice comes in. It’s so island-ey on the nose, but less so on the palate. It brings more of a traditional rye fiery kick, but mellows a little on subsequent sips. There is a little banana on the finish, though think less peel and more bananas foster. Alley 6 is like the roasted cooked fruit of rye.

Sip slowly to let its complexity pique your interest. I could see drinking this watching the back and forth of thunderstorms rolling in. Like a thunderstorm, you don’t entirely know what you’re going to get—and that’s cool.”

Alley 6 Single Malt Whiskey is twice distilled in direct-fire, traditional copper alembic pot stills from 100% aromatic malted barley from Heidelberg Germany. Each batch is aged for a minimum of nine months in small, heavy charred, used American White Oak barrels.

ALLEY 6 HARVEST GIN

BATCH NO. 2  |  80 PROOF (40% ABV)

Our Harvest Gin is first distilled in direct-fire, traditional copper alembic pot stills in order to keep the wonderful aromas of the Viognier. Then, it is distilled one final time in a column still so that we can infuse the botanicals and offer you this unique aromatic gin.

This Gin isn’t your typical gin. It’s a seasonal, limited release aromatic grape-based gin we make once a year at harvest time. The floral Viognier white wine pomace from local wineries is fermented and pressed at our distillery. We then distill it using traditional techniques. Once we have the base spirit, it’s finished with a combination of unique botanicals vapor-infused in a botanicals basket. We combine locally harvested California bay laurel and wild fennel along with juniper berries and an array of delicious botanicals. The result is a floral and complex spirit crafted to entice the most discerning palates.

ALLEY 6 86'd CANDY CAP BITTERS

86 PROOF (43% ABV)

Alley 6 86’d Candy Cap Bitters is composed of aromatic Candy Cap mushrooms foraged from the Sonoma Coast and a melody of baking spices that are extracted with our base rye spirit and finished in small oak barrels.

Our head distiller and co-founder, Jason Jorgensen, was 86’d from the bar industry due to residual prohibition laws in the state of California. Our line of 86’d Bitters is his ode to the industry.
